TOSA INSPIRE
In Kochi Prefecture, there is an "Okyaku" culture which sees many people, including relatives, friends, and guests from the neighborhood gather to enjoy sake and have parties. The dishes served at these parties are "sawachi dishes", in which various types of food are arranged on large platters.
OMO7 Kochi offers buffet-style meals based on the concept of "inspired by Tosa", incorporating local Kochi cuisine and cooking methods. Start enjoying Kochi's food culture by creating your own platter — select your favorite dishes from the circular buffet table, designed based on the vividly-colored arrangements of "sawachi dishes".
Bonito, the pride of Kochi
Active at water temperatures between 15 and 30℃, bonito ride the Kuroshio Current northward from near the equator to the seas of Japan from spring to early summer, then move southward from the Sanriku Coast in fall. Therefore, in Kochi, there are two seasons for bonito every year — the "hatsugatsuo" season (around March to May) and the "modorigatsuo" season (around September to November).
The "hatsugatsuo" that head north in search of food is relatively small, but is characterized bu its low fat content and light taste. Its firm flesh goes well with garlic and other condiments, and it is recommended to serve it finely chopped.
The "modorigatsuo", which move southwards after feeding on plenty of food in the rich waters off the Sanriku coast, where the Kuroshio and Oyashio currents meet, is larger than the "hatsugatsuo", and is characterized by its rich fat and plump texture. It is also recommended to serve it as sashimi, as the fat goes well with soy sauce.
OMO7 Kochi offers two dishes that allow our guests to enjoy bonito even more.
Seared bonito (dinner)
You can enjoy the aroma of the freshly cooked fish and eat it as it is. After tasting the flavor of the ingredients with salt, enjoy an exceptional deliciousness by adding "nuta", a seasoning from Kochi.
Bonito Pickled Rice Bowl (BF)
The pickled bonito, through which the flavor of bonito has permeated, and the fluffy freshly-cooked rice combine perfectly, allowing you to enjoy luxurious flavors beginning in the morning.
